Celery Root (Celeriac) Slaw

Ingredients

  • 3 cups finely julienned celery root
  • 3/4 cup real mayonnaise
  • 3 to 4 tablespoons cream
  • 1/8 cup finely sliced onion
  • 1/8 cup chopped chives
  • 2 tablespoons lemon juice
  • 1 tablespoon capers chopped
  • 1 tablespoon chervil chopped
  • 1 tablespoon tarragon chopped
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Whisk the mayonnaise, onion, chives, lemon juice, capers, chervil, tarragon, and Dijon together. Add in enough cream to get the consistency you desire.
  2. Toss enough dressing with the celery root as needed to coat the celery root. Reserve any extra dressing for another use.
  3. Serve.
