Tropical Salsa with Mango, Pineapple, and Red Pepper
Great naturally sweet salsa with fresh mangoes and pineapple. Using Anaheim chiles, it is a medium hot salsa. If you want it hotter, use a hotter chile.
Tropical Salsa with Mango, Pineapple, and Red Pepper
Ingredients
- 2 ripe mangoes cubed
- 1 cup fresh diced pineapple
- 1 roasted red bell pepper skinned, seeded, and chopped
- 1 roasted Anaheim pepper skinned, seeded, and chopped
- 1 small bunch of cilantro cleaned and chopped
- 1/2 cup chopped red onion
- 1 large garlic clove minced
- 2 tablespoons corn oil
- 1 lime for juice
- Salt and pepper to taste
Instructions

Place all the ingredients in a bowl, tossing to mix. Season to taste with salt and pepper.
