Tropical Salsa with Mango, Pineapple, and Red Pepper

Great naturally sweet salsa with fresh mangoes and pineapple. Using Anaheim chiles, it is a medium hot salsa. If you want it hotter, use a hotter chile.

Ingredients
  • 2 ripe mangoes cubed
  • 1 cup fresh diced pineapple
  • 1 roasted red bell pepper skinned, seeded, and chopped
  • 1 roasted Anaheim pepper skinned, seeded, and chopped
  • 1 small bunch of cilantro cleaned and chopped
  • 1/2 cup chopped red onion
  • 1 large garlic clove minced
  • 2 tablespoons corn oil
  • 1 lime for juice
  • Salt and pepper to taste
Instructions
  1. Place all the ingredients in a bowl, tossing to mix. Season to taste with salt and pepper.
