Green and Herb Salad with Simple Dijon Vinaigrette

A simple herb and lettuce salad recipe with fresh herbs, and a vinaigrette with white wine vinegar. Use whatever herbs you have fresh in the garden, in whatever mix you desire: parsley, chervil, cilantro, mint, dill, or basil are all great choices.

Green and Herb Salad with Simple Dijon Vinaigrette

Ingredients
  • 1 head lettuce
  • 1 handful mixed herbs, chopped Mint, parsley, chervil, cilantro, etc.
Dressing
  • 1/4 cup salad oil
  • 2 tablespoon white wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
Instructions
  1. Chop up lettuce. Place in large mixing bowl. Sprinkle the chopped herbs over the top, and toss to combine.
  2. Whisk the mustard, salt, and pepper with the vinegar. While whisking, stream in the oil. Mix until combined. Pour over the salad, and toss to coat.
  3. Serve.
