Cream of Celery Soup

Ingredients
  • 2 cups diced celery
  • 1 quart water
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • Salt and pepper to taste
Instructions
  1. Bring the celery and water to a boil in a large saucepan, then reduce heat and simmer until the celery is tender, and water is reduced to 2 cups in the pan. Drain celery, reserving 2 cups of the liquid.
  2. Puree the celery, and then reserve.
  3. Melt the butter in a large soup pot and and add in the flour. Mix until smooth.
  4. Add in the milk and celery water in a steady stream and whisk until smooth. Season to taste with salt and pepper.
  5. Simmer slowly for 10 minutes, stirring frequently.

Tropical Salsa with Mango, Pineapple, and Red Pepper

Great naturally sweet salsa with fresh mangoes and pineapple. Using Anaheim chiles, it is a medium hot salsa. If you want it hotter, use a hotter chile.

Ingredients
  • 2 ripe mangoes cubed
  • 1 cup fresh diced pineapple
  • 1 roasted red bell pepper skinned, seeded, and chopped
  • 1 roasted Anaheim pepper skinned, seeded, and chopped
  • 1 small bunch of cilantro cleaned and chopped
  • 1/2 cup chopped red onion
  • 1 large garlic clove minced
  • 2 tablespoons corn oil
  • 1 lime for juice
  • Salt and pepper to taste
Instructions
  1. Place all the ingredients in a bowl, tossing to mix. Season to taste with salt and pepper.
